Imagine a meat that's not only low in fat, but that is actually good for your heart. That's what geneticists may have created by adding DNA from the roundworm C. elegans to pigs. The genetically modified pigs yield meat containing omega-3 fatty acids, which are thought to prevent heart disease, depression and Alzheimer's disease.
This is not the first effort to genetically alter the fat content of animal meat, and it's a long way from appearing in your local grocer or deli. “We understand that this research is in the very early stages,” FDA spokeswoman Rae Jones said. “This technology will not likely reach meat counters for many years.” Even if the technology were market-ready today, FDA approval alone could take a decade or longer.
